This coffee comes from the beautiful natural environment of the Yirgacheffe appellation, famous for its high-quality coffees.

Thanks to its aromatic qualities, this coffee is particularly well-suited to filter brewing. Organically grown, it is distinguished by its slightly spicy notes that give it body, balanced by refreshing hints of peach and lime. A real treat!

The washing station is located in the village of Chelbessa, specifically in the Danche region of the Gedeb woreda. It sits at an altitude of over 2,000 meters. The coffee processed by the station comes from hundreds of local producers.

Drying beds
Drying grains on beds after harvest in Chelbessa in the Yirgacheffe region

After harvesting, the cherries are left in the shade for 45 to 60 hours in a slow fermentation process before being washed to remove all the mucilage. The coffee is then spread in a layer 5 to 10 cm thick and dried for 7 to 10 days. The drying beds are opened at 3 a.m. and closed from noon to 2 p.m., before being opened again until 5 p.m. for drying.
